This is an absolutely delicious side item! I make it for all holidays, and then just on ordinary days also! Just this morning I made it for an office staff meeting! It is just yummy goodness!
Sweet Potato Casserole
5 medium sweet potatoes, cooked and mashed (or 2-29 oz. cans)
1/3 c. milk
3/4 c. sugar
2 eggs
1 stick butter
1 tsp. vanilla
Topping:
1 stick butter
1 c. brown sugar
1/2 c. All-Purpose flour
1/2 c. chopped pecans
Directions:
Mix sweet potatoes, milk, sugar, eggs, butter and vanilla all together well. Pour into casserole dish.
Topping: Mix butter, brown sugar, flour and pecans. Pour over top of sweet potato mixture. Bake at 350 for 40 minutes.
*You can top with marshmallows if you want them. Bake 5 minutes more to toast marshmallows.
I just had to put this in here. He LOVES to sit on the counter and help me cook. I wonder if he will be a little chef one day?
