Banana Bread

Well this was my first real flop in the world of cooking. I decided to make this for my father-in-law for Christmas, because he loves bread.  So Friday I buy bananas and nuts (2 separate trips, mind you) because I have everything else at the house. I make the bread and set it out on the oven to cool while me and the hubs go see the makeover house. When I get back… my bread was deflated. I was SO upset. I realized that I hadn’t baked it for long enough, although when I inserted the toothpick, it came out clean. SO, I start ALL over again Saturday morning, but this time I baked it for an additional 15 minutes. The bread came out phenomenal! I wasn’t even going to put this recipe on here because of my first fail attempt, but after eating the 2nd batch, I had to put it on here. So yummy!! So yes, I will be posting the time it took me to bake it the 2nd time instead of the time thats on the recipe! (If you are using really small pans, just take 15 minutes off the time)

Banana Bread

Ingredients:

4 bananas, mashed

3 c. All-Purpose flour

3 c. sugar

1 tsp. baking soda

1 tsp. salt

1 tsp. vanilla

3 eggs

1 tsp. cinnamon

1 1/3 c. oil

8 oz. can crushed pineapple, undrained

Mix dry ingredients, except sugar, in big bowl. Set aside. Mix sugar, eggs, pineapple, vanilla and bananas with a whisk until blended. Add oil.  Whisk. Gradually add dry ingredients. Pour in greased pans. (I used 4, 3 larger and 1 small)

Bake at 350 for 1 hour. (take small pan out after 45 minutes)
