This is a recipe that I also got from a lady at work. Everyone LOVED Ruby’s meatballs. (She’s retired now) So I had to make sure I got the recipe before she left us! Everyone always requests them at holiday events!



2 lbs Italian Meatballs

4 c. Ketchup

Chopped onion (to your liking, I only use 1/4 of an onion)

4 Tbsp brown sugar

4 Tbsp lemon juice

2 Tbsp Soy Sauce

Here is the quick way;

Take meatballs out of the freezer and put them in a microwave safe bowl. Cover with paper towel and microwave for 10 minutes. Meanwhile, chop your onion. Mix ketchup, onion, brown sugar, lemon juice and soy sauce in a pot on the stove on medium heat. Let this heat up until meatballs are finished in the microwave. Stir often. Take meatballs out of the microwave and drain. Put in crock pot and pour sauce on top. Keep on low heat!

That way only takes about 15 minutes! Otherwise you can just defrost the meatballs in the microwave for 10 minutes and then just mix all the ingredients together in a bowl and pour over the meatballs (without cooking the mixture on the stove) and set your crockpot on low and let them cook for 2 hours.
