I could literally eat these as my meal! They are SO delicious!
Ingredients:
New Potatoes
Salt
2 Tbsp. melted butter
1 Tbps. chopped parsley

Directions:
Pare new potatoes.

Cook until tender in boiling salted water; drain. Add butter and parsley. Shake well over heat. You can serve as is, OR make this incredible white sauce to go over them!

Medium White Sauce
2 c. hot milk
4 Tbsp. butter
2 Tbsp. flour
1/4 tsp. salt
1/8 tsp. pepper
Scald the milk. Melt the butter in a saucepan over low heat or in a double boiler. Add flour, stirring constantly.

Stir in the hot milk gradually and cook, stirring constantly, until the mixture thickens.

Season with salt and pepper and pour over potatoes.

I’ve never seen potatoes done like that .. nice idea!
