This is my moms recipe. One that she used to make for us about every weekend when I was still at home. It is SO good! So this past Friday, my sister spent the night with me and she made it for breakfast Saturday morning! Believe me, this recipe won’t let ya down!
Ingredients:
3 eggs
6 Tbsp milk
1 Tbsp sugar
2 tsp cinnamon
1/4 tsp vanilla
7 pieces of white bread
Directions:
Heat up your skillet. Mix all ingredients, except bread. Lightly dip each piece of bread in the mixture and then place the bread on the skillet. Brown on both sides.
I also like to put some confectionery sugar on top of mine before putting syrup on top. That’s your choice though! Eat up! Mmmm.

So last night I had some homemade sausage thawed out and had no idea what to make with it. One of my friends suggested this recipe and it turned out to be incredible! Super fast, really easy…right down my alley! I think you will enjoy it too!
Ingredients:
Directions:
Fry your sausage in a pan. (like ground beef) After finished frying, drain off excess grease. Pour sauce onto the sausage and cook on low. (I used about 3/4 of the jar, but it’s really your personal preference on how much you want to use.)
In another pot, prepare your noodles. Just follow the directions on the back of the bag. (Use tortellini because the Arrabiata sauce is thinner and you need the creases and indentions to hold the sauce. )
After your noodles are cooked, spoon some of the sauce mixture onto them and eat up! Yummy deliciousness for your enjoyment!

I found this recipe from another blog called The Girl Who Ate Everything. She has quite a few recipes that I want to try. This one was fantastic!!! It was better than I was even expecting! Definitely one that needs to be tried! I know I will be trying it again next week!
Spicy Honey Chicken
Ingredients:
8 boneless skinless chicken thighs (or 3 large chicken breasts)
2 tsp vegetable oil
Rub:
2 tsp granulated garlic (I used garlic salt)
2 tsp chili powder
1/2 tsp onion powder
1/2 tsp coriander
1 tsp salt
1 tsp cumin
1/2 tsp chipotle chili powder
Glaze:
1/2 c honey
1 Tbsp cider vinegar
Directions:
Combine the rub spices in bowl and mix well.
Use kitchen shears to trim off any excess fat from the chicken pieces. Pat dry. Drizzle oil over chicken and rub in with your hands to lightly coat all the pieces. Then toss chicken with the spice rub to coat all sides well. Use your hands and get in there! Grill chicken for 3-5 minutes on each side, until cooked through.
While chicken is cooking, warm honey in the microwave for 20 seconds so it’s not so thick. Add the vinegar and combine well. Reserve 2T honey glaze for later. Take the rest and brush on chicken (both sides) in the final moments of grilling.
Glaze again right before you you serve and enjoy this wonderful, tasty meal!

So Saturday night we took advantage of Charlotte Restaurant Week and went to Epic Chophouse in downtown Mooresville. It was a 3 course meal for $30.
My first course was Lobster bisque. It was sensational! I was so hungry that I forgot to take a picture of it! But wow, it was great.
My second course was Prime Rib. That was some of the best prime rib I have ever eaten in my life. It was INSANE!
For dessert, I chose the chocolate cake. My sister got the Strawberry Cheesecake. They were both fantastic. This really was one of my favorite restaurants ever…quite possibly THE favorite…
…But I will have to determine that after this weeks trip to Ruth’s Chris.
*Check out my hair! My sister fixed it for me! I received the compliment (?), that it looked like it was on fire! Ha!

This is the first time that my little Henry has been sick. It has been SO hard! I hate watching him cough and then cry because it hurts him and he doesn’t even understand what’s going on with him. I just wish I could take the pain away!
He has been super great through it all. Better than me, I’m sure. He is so precious when he just cuddles up with me on the couch and watches cartoons. Mickey Mouse Clubhouse is his favorite. He just lays his little head on my chest and will stay like that. He is a rambunctious little kiddo, so that is VERY unusual for him.
I stayed off work 2 days with him this week after having a three day weekend, and I think I got even more attached than I had already been. He just makes me so happy. Last night I just watched him sleep. It is so crazy how much you can love.
He wanted so badly to be able to play Tuesday, but he was so weak he could hardly walk. He would start, and then fall and cry because he wanted to be able to play as usual. It was really sad for me to watch. He would just stand himself back up and try again though!
I keep finding him standing at the bottom of the stairs and just staring at them. He knows they are a “no-no”. As soon as I see him standing there, and he sees me… he goes for them. He knows what he’s doing. So I say “Henry.. what are you doing”? And here is my response…
He is a little stinker.
I love him so much.
I am just so use to him being happy and energetic that this sickness has really been a change up. I just want to be with him ALL the time and make him better.
I am ready for him to get back to this!!
But for now, I will just take care of him the best that I can. Even with a snotty/crusty nose, he is still my precious little angel that I love so dearly. <3

Here is another recipe that I found on Pinterest! It was a SUPER easy fix, and it turned out quite tasty! I can’t wait to make it again!
Ingredients:
Directions:
Mix BBQ sauce with all ingredients listed under it. Place chicken in crockpot. Pour sauce over it and cook on LOW for 4-6 hours. Take out and eat up! And it’s THAT easy!
